Linux's ability (via SSH) to handle all non-hardware system administration remotely would greatly increase the effectiveness of the staff. In a school there must always be on site technical staff, but in a pinch this is a great feature to fix an emergency or to lend extra exptertise.
Also with most Linux distros you can not only customize the choice of applications and desktop funcitonality to keep students focused, but also these customizations can be put on CDs. Then when a machine's settings get changed too much by the kids, just pop in the disk and let it put in a fresh install. This worked great at the University I studied at.
