It should be noted that the speaker for the Linux Professional Institute, Evan Leibovitch, also chose not to use PowerPoint - he used his own Linux laptop and presented in OpenOffice.org Impress. He even had a funny wallpaper with three cute little penguins with the words "World Domination" over them.
His presentation was impressive in itself; he basically refuted the MS guy point by point. He must have re-tuned his presentation right from his computer in real time. A nice working proof that today's open source software can be just as powerful and effective as proprietary software.
Another speaker, Brent Gorda from the Lawrence Livermore Laboratory, quietly remarked that PowerPoint was messing up his slides, which suggests he probably also originally generated them on OpenOffice like Brad did.
In Day 3, the closing keynote speaker Steve Mann also bucked the trend and used his own laptop with HTML pages running on Firefox and Linux.
