I use rsnapshot (http://www.rsnapshot.org), backing up Windows file servers (using an rsync port) to a Linux box with RAID-1. The rsnapshot tool does a nice job of incremental backups. If you want a deep backup history (e.g., 12 hourlies, 14 dailies, 4 weeklies, and a batch of monthlies), I'd recommend your backup disk space be 3-4 times the size of your file server's in-use data.
