If you want stability, and still to play with unstable software, all you have to do is run debian sid (=unstable) in a chroot. The debian reference even has detailed instructions on how to do this with an X login. There is absolutely no reason to run testing/unstable as a standalone system.
You can also add experimental apt sources to your sid chroot, and really live on the edge with no danger to your system or data.
