There's a simple method which doesn't require any third-party tools, and only requires only one machine. I wrote up a step-by-step guide <a href="http://porpoisehead.net/hi/?q=node/23" title="porpoisehead.net">here</a porpoisehead.net>.
The quick summary is to use Skype 1.3 beta (which uses ALSA), set the mix option in the mixer, and use an ALSA-friendly sound recorder (gnome-sound-recorder and/or krecord work fine).
