Nobody uses just plain Ethernet. Most People use TCP/IP on top of ethernet, iSCSI does. Other protocols that run over ethernet include AppleTalk and IPX. AoE dumps the TCP/IP overhead by using its own protocol and identifies network nodes by MAC address instead of by TCP/IP addresses.
