After all it is the content you are interested in. That is why we piped through tools such as deroff back in the days of old.

Maybe, since ODF is XML, there is a deXML filter one could pipe the odt files through.

Actually, saving content as text lets one use RCS or similar to track the file changes. Handy when you want to reuse your content.
