Dude. I was using google talk on Gaim before the official google talk client was even released. Google talk is jabber. It works fine. Google even lists gaim as a supported client, and tells you how to connect with it.
Look on talk.google.com and you'll see: "Mac and Linux users can connect to Google Talk using other IM clients" Follow the link and...hey, it's a chart. And there's gaim. Oh, and there's instructions for using it too when you click on the name! <a href="http://www.google.com/talk/otherclients.html" title="google.com">http://www.google.com/talk/otherclients.html</a google.com>
