Slimserver is not all free software, so distributions can't package it without a lot of work. In particular, I don't think any of the currently supported themes are redistributable.
Slimserver seems to require mysql these days, along with innumerable perl modules.
MPD is easily drivable from a text console, various web frontends, and a wide variety of GUI clients. Slimserver? Not so much.
