If you're not afraid of the command-line, then sox (http://sox.sourceforge.net/) is a great tool to convert and especially to manipulate audio files. Some might not know that beside boring WAV or AU, this handy tool also reads and writes MP3, OGG, FLAC and many other formats. It allows to edit audio, like adjusting volume, applying effects, resample, etc, which can be very useful. Needless to mention that this is probably the greatest tool for batch processing. It's not without reasons it's called the swiss army knife of sound processing programs.
