If, like me, you shun the tinsel of the desktop, then pacpl (<a href="http://pacpl.sourceforge.net">http://pacpl.sourceforge.net</a>) is an excellent choice. Simply give it a command such as the following and it will do whatever is necessary to convert to your format of choice:
pacpl --convertto ogg *
It will preserve tags from the source files and lets you select the target bitrate/quality etc. It's never let me down.
