Maybe this would work.
A Linux Project to replace Firmware/OS with standard stuff (askerisk-like, hylafax, etc),
then you could have a remote admin tool to control the multi-function system better?
Like the Linksys routers, that you can replace with firmware that will allow for VIOP traffic to have dedicated bandwidth, maybe it is time for folks to start hacking these copiers too?
