Mounting Logical Volumes from the Volume Groups for older versions of Linux should work, but may take a little digging. Look up the vgscan and maybe lvchange commands. Be careful, though, about LVM versions. Sufficiently old Linux versions may be using the LVM version 1 format as opposed to the current LVM2.
As for GRUB, I must admit I still use the ~100M /boot partition (not in LVM) for each version of a linux OS I'm setting up for multi-booting. It's just been a lot easier to deal with.
