A very large portion of the techs and admins in this country and around the world are trained on Windows servers which do include the GUI.
Also, modern computers/servers resources available have more than doubled even in the last four years, so the impact of using GUI isn't the detriment it used to be, if at all.
and, it is easier than ever to switch from runlevel 5 down to runlevel 3 in which X is not running at all, thus conserving those 'precious ' resources some are concerned about wasting. This also can address much of the security concerns some have about GUI entry points and holes. simply exit runlevel 5 and the doors are closed.
Mostly it is about 'comfort levels' a in, what is the user/tech/admin most comfortable and familar with.
If one is more comfortable/familiar with an interface, they are going to be more productive and better able to produce positive results in quicker time than if they are working in totally unfamiliar territory.
