If you have compositing running I recommend Gnome-Do with the Docky interface. It feels more stable than some of the others and more intuitive. (Drag and drop apps gnome menu to dock, and to remove drag apps off of the dock)

I'm really fond of Hanna's set up, looks awesome.

I agree it is freaking awesome! Very professional looking.
