Why would you want to run multiple instances or apache http server in a single box, wouldn't it be a better use of resources to instead utilize virtual hosts for multiple sites.

Per my research there is no set limit of virtual hosts you can run in Apache, your core limitations will be based upon memory and the amount of open files htat can be owned by a single process.
