There are plenty of books about various Linux based distributions, but to understand it you would be best off downloading and running a Live disk from a distro such as Ubuntu, Fedora or Mint.

My first book was "Linux in a Nutshell" http://shop.oreilly.com/product/9780596154493.do . It's a good place to start.
