I have no experience using zimbra but I guess you should do as with any other backup: copy the config files to a safe place as well as the "information" of the application.

Reinstall it on the new server/machine/whatever and copy back the configs and files.

If you have enough hard disk you can alwasy do an image of your hard drive/partition with dd and deploy it on the new system :)
