Yes. You can either simply copy the information you want from the Windows partition into folders in the Linux partition, and then delete the windows partition and grow the linux partition, and then remove windows as option from your boot loader

OR

you can just remove windows as an option from your boot loader and then add the windows partition to your /etc/fstab to make Linux mount it into the file system somewhere (like /oldfiles or something)
