Take a look at XBMC. I had to soft mod my xbox first to replace the dashboard. Then I was able to install XBMC. Though the xbox hardware is a bit limited it still makes a great general media player. Take a look at the link below for more info. Hope this helps.

By the way I even have two other xbox lying around, not modded, I'd like to softmod them but instructions refers to games and controller not available now or really hard to find, is there someone of you with "hints" on it ?

I know the project, my biggest issue at the moment is related to hw material, it's really hard to find original games and game replays (hw usb device where to save games for hacking).
These two are required for sw hacking, even on GameRush or retail stores they're not available even for rent or something else. It's easier to find an xbox modded on ebay, softmodding on old consoles is becoming difficult due to the lack of materials
