does any one know if you can run VLC, j-zip, and Trucrypt, on the Nubutu OS?? or can I try running these programs on the trial USB version to see if they work??

Sure, go nuts. You can try running anything on the "trial USB". As long as the USB's file system is big enough to install software. It's been a while since I downloaded one of those images, so I'm not 100% sure. If the image is too small, though, you might be able to partition the remaining space on the usb device (assuming there is any left) and then moutning that space into the existing file system with unionFS and then installing more software, OR you can just modify / build the USB image yourself, too.

I don't know how you intend to try Trucrypt on a Live USB, but, the only restriction to the amount of programs you can add to a Live version is the amount of memory your computer has installed.

All of the programs you listed are available for ubuntu, which means that they should also work on ubuntu derivatives such as nubuntu. you should not have any issues installing them via apt-get.
