MDTools are the most important tools you need to use if you'd like to learn something. If you want to create a complete raid system without automatic tools or distros and you'd like to learn something take a look at Gentoo, it even provides you a software raid installation (http://www.gentoo.org/doc/en/gentoo-x86+raid+lvm2-quickinstall.xml), if you manage mdadm and these tools it's not so difficult to create your own machine (raid applied to boot and swap partitions as well).
Please note if you want to create a software raid installation please put swap into a raid partition as well, it would be very dangerous to leave it outside your raid partition
