I manage Linux servers for a living, and every one of them is setup as RAID5 with a hotswap spare on hardware RAID controllers.

Of course, with two drives, your only options for RAID are RAID1 or RAID0, but both configurations are fully supported with software, as well as hardware solutions under Linux.
