CentOS has official documentation on the topic on their wiki.
It's for 4.x/5.x but there shouldn't be much of a difference.

IIRC there's a spec file in the nagios sources. Use that to create an rpm and install nagios in your system.
Nagios might seems overwhelming at the beggining but in the end is pretty straightforward :)

I rather install nagios from the (EPEL repo than from sources.
Sources are usually a *bad* idea.
Marc is right, unless you have a specific reason ( compile time options like an extra library you want, etc ) you should really be sticking to repositories.
Installing EPEL will take the process from the list you linked to "yum install nagios"
