Multiple monitor setup in Ubuntu 18.04 LTS based distro

I am having trouble getting multiple monitors to maintain my display settings after a Log Off or reboot. Each time logging in from a log off or reboot, I have to add the second monitor using Display settings. By the way, there is no ~.config/monitors.xml file to edit.

Wasn't sure if you couldn't add one. 

Can't find anything either way in regards to 18.04. I did find one solution that a person uses, they run the setup in their login script each time to set the monitors up like they want them. This is their example ---

#!/bin/bash
nvidia-settings --assign CurrentMetaMode="HDMI-0: 2560x1440 +0+0 {viewportin=2560x1440, viewportout=2560x1440+0+0}, DVI-D-0: 1600x900 +2560+0 {viewportin=1600x900, viewportout=1600x900+0+0}"

This makes the default screen as the HDMI output with the desired resolution and the DVI output as the second screen next to the primary.
